Weight Gain Rebound: How I Lost the Most Weight in One Day

As most of you know, this past weekend, I ate and drank horribly (aka high carb) for 5 days in a row starting last Thursday night.  I enjoyed myself and even before today, had no regrets.  It’s not like I didn’t know what I was doing.  I knew I was going to gain a bunch of weight, I knew I would have to report it in my weekly videos, and I knew I would have to report it during my weekly weight loss club meeting.  It was inevitable, and I didn’t mind. 
Why didn’t I mind you ask?
Well, I didn’t mind, because I knew it was temporary and that I would get back to normal in due time.  That’s right, I now feel that eating low carb, high fat, moderate protein (in a state of ketosis) is my new normal.  It is quite the amazing feeling, that something as powerful as a changed diet to gain health and prosperity can become your normal diet. 
When I woke up Tuesday morning, after having finished a pint of Ben & Jerry’s the night before, and gaining over 5 pounds, I knew what to do.  But this time it was different.  I didn’t dread it.  I WANTED to go back to my new normal.  I had not one negative thought about eating low carb, and no longer indulging in the so called forbidden foods.  During my indulgences, I always told myself to enjoy it now, because I will be going back to normal to continue my journey of health and weight loss.  What an amazing, empowering feeling. 
So this Tuesday through Thursday I have ate exceptionally well.  I even tracked my food on Tuesday just to see how well I was doing and had the following stats:



Not bad right?
Every morning I woke up with a weight loss between .5 to 1.5 pounds. 
Then it happened. 
This morning. 
The LARGEST weight loss I have EVER had in a single Day:
4.2 POUNDS!
I know this is a rare moment for me, but my easy work (face it, this “diet” is super easy) has paid off! 
What have I been doing?  
Below I will talk about what I have been doing, some of which are different for me:
SMALLER MEALS:
I’ve read so many accounts of people eating very large meals at breakfast which keeps them full through lunch, sometimes even until dinner.  Those people are lucky.  This is something I simply cannot do.  Not only do I feel bloated, but I also feel extremely tired.  Not good when you have to put in over 8 hours at work, then go home and actually do something more productive than sit on your butt. 
So now, I simply eat a very small breakfast, as you will see in my daily record outlined below. 
ONLY ATE WHEN HUNGRY
I am trying out this new thing (Insert Sarcasm) – it is based on the idea that your body knows what it needs, and when it needs to have it.  Therefore, I am waiting until I am hungry.  The low fat method teaches that a growling stomach is a sign of weight loss (due to under consumption of calories).    If you are reading this, I’m hoping you already know that this is definitely not true.  By waiting until my body tells me that I should be eating, I am not taking a chance on over stuffing my body with excess energy not needed.  And we all know where that ends up! 
COCONUT OIL
I gave up the coconut oil eating for a few reasons.  One is that I just don’t like the taste of it.  But on Tuesday, I went to my local health store and bought a brand that I am pretty sure blows Tropical Traditions (as far as taste) away.  It is called Tree of Life organic Virgin Coconut Oil.   The other reason is that I was just being lazy.  Enough said on that subject. 
I have been having this in my coffee again, along with Ceylon cinnamon and a tablespoon or so of heavy cream.  It is such a wonderful and pleasant taste.  I will not be adding butter into my coffee, like I had done months ago.  I get enough butter with the rest of my meals, that I don’t feel the need for the excess fat.  I am saving this moment for the coconut to do its magic. 
FERMENTED FOODS
About a month ago, my husband made up 2 mason jars of sauerkraut to attempt our first try at Fermented foods – something neither of us have ever ate let alone made.  We also made spicy dill snap peas, which were ready much sooner (about 2 weeks ago) and absolutely addictive.  This week  we opened the sauerkraut and I have eaten about a ¼ cup to ½ cup every day.  In addition to that yesterday, I also had a taco salad, and I used an organic fermented sour cream.  It was delish! 
I can’t be sure that the fermented foods have done any great things in my body, but I can tell you that everything I have read says that I will absorb my nutrients much better when also including fermented foods in my daily diet.  So I’m going to assume they are right.  Plus, I feel much better than taking those probiotics pills, that I am pretty sure gave me anxiety! 

DAY IN MEALS:
8:30am  = Egg Salad (2 eggs, 1T mayo, 1tsp Mustard, Smoked Paprika, Salt & Pepper);  7 Slices of Bacon
9:00am to 10:30am = 1 Cup of Coffee (Ceylon Cinnamon, 1T coconut oil & 1T heavy cream)
12:15pm = Leftover boneless Pork Chop (cooked in bacon and butter);  Veggie medley (green beans, red pepper, yellow squash, onions, broccoli sautéed in butter and extra butter added); and ¼ cup sauerkraut.

6:00pm = I got hungry, but was at a meeting and could not eat at this time.  Hunger left after about 30 minutes or so.  No sugar drop feelings from not eating.  Felt great.

7:30pm  =  Taco Salad made with 1/2c broccoli sprouts, 1/4c shredded cheese, 1c taco burger meat, 1/4c fermented sour cream; 1/4c guacamole (fresh made); 1T onions, 1T chopped jalapeno.  YUM!

8:30pm = Small bag of pork rinds dipped into fermented sour cream.   (eating another snack is not normal, but I was hungry and there was still an hour before bed)

Merry 2014 Christmas!

After exchanging Christmas gifts, my husband and I moved to the kitchen to make Christmas Breakfast.  My job - To make the Cinnamon Swirl pancakes with vanilla glaze.  My husband cooked the sausage, bacon, and eggs.  

I DID NOT touch the pancakes.  I didn't even want any.  MY son, on the other hand, ate for the both of us.  

For a snack, I ate pork rinds dipped in spinach & artichoke cream cheese.  That is yummy if you haven't tried it yet.  

And now...

I am sitting here pondering my first Christmas without sugar, treats, chocolate (although I do see some dark chocolate in my future), cookies, candy canes, etc.   

It is very hard for me to fathom the change that has happened to me by taking part in this Low Carb High Fat adventure.  My life has literally been flipped right side up and landed where it should have been all along.  

Part of me feels sad.  Not because I wished that I could have those things, as I have NO cravings, even while I spent 45 minutes making the pancakes.  I am sad because I wish I knew about this way of eating BEFORE 2013.  I know everything happens for a reason, and I do feel that if I had learned it at a younger age, I would have blown it off.  

And a thought just occurred... I tried Atkins, and it failed me.  It only failed me because I dealt with daily diarrhea and was told that I would have a heart attack by the media and my peers. Then later, when the rumors that Dr. Atkins died from his own diet, that set in stone that I had made the right decision. 

So the natural answer was that low fat, low calorie was the right diet after all.   

If I had not taken the journey of trying low fat, low calorie and later vegetarianism, I would not have been where I am today.  If I hadn't tried those ways of eating, I would still be questioning my way of eating now.  It is my experience in those other "ways" that I am 100% confident in the correct way - LCHF.  

So yeah, part of me is sad that this is my first Christmas doing the right thing, and that I may have wasted so many years of eating terribly.  

But the rest of me is extremely happy.  Extremely happy because I am SOOOO Strong now that I CAN eat healthy on Christmas Day with NO regrets, NO cravings, and NO doubts.  

I look forward to a lifetime of holidays, birthdays, anniversaries, vacations, etc. of knowing that I can not only "handle" eating healthy, but I will be "HAPPY" eating healthy.

I hope that you can find this same moment in your life and feel the same happiness.

VERY HAPPY DAY Week 9 Day 58

I feel ecstatic today.  Within 5 seconds of being at work, I was receiving a compliment that I look great from a very sweet co-worker.  What a way to start your day!  

An hour later, another co-worker was telling me the same thing.  Both of these ladies made me feel like I was on top of the world.  

I wish I could force people to feel how good I felt today.  Its days like this that make me wish I knew this way of eating back when I was 18 and first started to put on the pounds.  I can only imagine how much more intelligent I would be today, if I hadn't burned those brain cells consuming the awful "food" I have consumed in the past 12+ years.  

B:  2 Homemade breakfast sausages

L:  Romaine lettuce, wild caught smoked salmon, goat cheese, and parmesan dressing

D:   1 Chicken breast, cabbage and a couple chopped carrots.  (All roastd in butter)

Week 6 Results are In!

Well, well, well!  It's been 6 weeks of great results.  This week's work resulted in a 2.6 pound loss, for a total of 22 pounds!  I.FEEL.GREAT!

Here is a quick summary of this week:

- Quite a few co-workers noticed my weight loss
- My HUSBAND noticed my weight loss
- My DAD noticed my weight loss
- I went for a 1 hour walk and didn't want to go to bed
- I have had no negative thoughts about this lifestyle at all!

Exercise for the first time in a LONG time.... Week 6 Day 39

Government shutdown has continued, which means I still have the entire day to myself.  2 days in a row to do whatever I want!  I decided to take Roxy the basset hound for a walk and it was good.  

We walked a total of 1 hour and almost 3 miles.  It would have been a faster 3 miles, but I literally dragged her and even had to carry her 40 pound butt up a hill at one point.  She (and I) will sleep good tonight!

On my way back from the walk I realized that it must be after 2 and I haven't ate lunch.  That has not happened in a LONG time.  My "old" self would have been looking forward to my next meal while making the current one.  So I didn't eat until dinner, which may be causing my problems I am having this evening.  

I have a horrible headache and heartburn.  I haven't had heartburn since maybe week 1.  

B:  2 Chicken thighs sauteed in butter
S:  1/2 Ghiardelli dark chocolate (86%)
L:  Nothing
D:  Herb and Parmesan cheese crusted pork loin with broccoli/butter and sauteed green beans

A Great Day.... Week 6 Day 38

Today was a good day, considering my situation.  Yesterday, within 5 minutes of walking into work, I was provided a Government Furlough letter and told to go home until Congress can figure the budget out.  I will avoid providing any of my thoughts, as I'm sure you can guess them.

Since I was home alone and had some laundry to do, I got to it!  I decided to try one some clothes that I threw on the shelf because they didn't fit as good as I had hoped, shrunk after being washed,etc.  I am proud to say that I was able to wear ALL of those items and add them back onto the hanger club.  I even wore one of those shirts today, Proudly!  

I than tried on my 2nd wedding dress (the dress worn after the wedding dress on my wedding day) and that fit SO much better than my wedding day.  

Now... the moment of happiness that I have been wanting since I was pregnant with my son (7 now).  My husband gave me a gift that I truly loved on our first Valentine's Day.  He ordered me (from Japan) a black silk with gorgeous embroidered flowered robe.  It is amazing.  I have not been able to wear it, like I said, since 8+ years ago.  I tried it on today to see how far I have come, and I was able to put the two sides together and it covered my stomach.  HOLY.COW!  Although it doesn't fit properly enough to where I could wear it around my son, I am so happy that it fits that much closer that I started to cry.  Seriously glad I was home alone for that.  I have not told my husband, although I was so happy I wanted to call him at work right away.  Instead, I have decided to wait until it fits me exactly as I want, and I will surprise him then.  

Today was a very happy day for me!

L:  Salad made with smoked salmon, goat cheese & asiago parmesan dressing (Marie's).
D:  Chicken breast, sauteed green beans with garlic and steamed cauliflower with butter 
S:  A bite of almond butter and handful of mixed nuts.

Week 5 Results

Hi There.  

It didn't feel like a great week (thanks to that time of month), but I had great results - Over 3 pound loss!  I have lost a total of 19.4 pounds and 7% body fat loss.  Wow!

Good news... Just in time

So this morning I woke up to a 2 pound loss!  I am not going to lie, this is exactly what I needed after yesterday's .6 lb gain and the odds and ends gains the last 2 weeks.  Although my overall trend is losing, its still mentally hard to get past the mornings when there is a gain.

I have not been keeping track of my nutrition in MyFitnessPal, but I have been using the site often to ensure I am staying on track with my carbs.  

Aunt Flo is visiting right now, so I am extremely tired and need extra sleep (normal monthly routine for me).

4 Weeks down and the Results are in....



The results are in and although I am happy that I have lost a significant amount of weight, I am also a little discouraged. 

You see, when I first attempted this way of eating (LCHF) a few months ago, I lost 14 pounds in 14 days.  I know that is not a normal weightloss, but for someone like me whom has to lose over 100 pounds, I know that the first few weeks to a month are going to be my greatest weightloss, and then the weeks/months following will be extremely lower.  

So you can imagine my frustration when my entire month's weightloss is hardly more than my 2 week weightloss the first go around. 

The obvious question is "What am I doing differently"?  Well honestly, I feel like the only differences are actually more positive and would have resulted in a greater weightloss.

Here are the differences:

First Attempt:
- Ate out a lot more often
+ Ate only Fat and Protein for Breakfast



This Attempt (Final):
+ Eat out a LOT less often
+ Keep track of meals
+ I feel much more motivated this time around
-  Drinking a lot of Herbal (mostly decaf) Iced Tea (mabye messing up        digestion?)
-  I have switched to eating soups for Breakfast, which contain vegetables (carbs), although they are minimum

I can't think of anything else right now that is different.  If anybody has any ideas on what I could be doing wrong, PLEASE let me know.

ALERT ALERT: First time Weightloss Noticed Day 24

I am actually at work, but I could not wait until this evening to write this post.  I am ecstatic.  I have experienced what every person trying to lose weight wants to experience. 

Walking down the hallway a moment ago, a co-worker stopped me and told me that I am looking thinner and asked me how much weight I have lost.  After telling her about 15 pounds, she said "you can definitely tell and keep up the good work".  

W.O.W!  I seriously cannot believe this has happened so early.  I'm very happy.

So can you see how happy I am?

Happiness and energy has found me....

Something rather wonderful happened for me today.... I felt happy.  My happiness was so noticeable that a co-worker kept asking me why I was so happy during a meeting.  At one point, she even looked at me suspiciously and said "something is going on, I know it".  ha ha   That was such a reassuring feeling for me.  

Do I really look that much happier?  Other than the tight ass heels I was wearing today, I even felt bouncier walking the halls.  I felt my head lifted higher than usual.  I greeted strangers with a smile and "Good Morning" or "Good Afternoon". 

Speaking of a good afternoon, I did not want to sleep after lunch.  I repeat  I DID NOT WANT TO SLEEP AFTER LUNCH.  Say what?  You heard it, I have been going full fledged energy since I woke up, and I feel awesome.  Honestly, its 7:43 at night, and I'm afraid I won't be tired enough to sleep.

Oh well, I suppose I deserve a warm bath and good read to help get me in the sleeping mood.  

I was not able to keep track of my dinner meal on myfitnesspal because we ate out, but I know overall, I did very well.  

B:  Leftover Taco Soup 

L:  Leftover Dinner, which was Guy Fieri Pork Onlet.  My hubby made it with green beans instead of cannellini beans (cuz he loves me)

D:  We went out to a Mexican Restaurant where I had a salad with chicken and chunky (freshly made) guacamole.  I may have overate a tiny bit, but by the time I am writing this, I do not feel that way anymore.  

I feel satiated, happy and energetic.  I pray that this continues.
